Simple Cucumber, Tomato, and Feta Cheese Salad – Meal Planning

Here’s a simple salad recipe that’s great as a light lunch or dinner side.  This is by no means a new recipe, but I’ve just been introduced to it.  I’m not a fan of tomatoes, but I can eat them with no problem in this salad.  Best of all, my ENTIRE family loves it too!

Ingredients

2-3 Large Cucumbers peeled and chopped

2 Roma tomatoes chopped

6 oz of crumbled Feta Cheese

Salad Dressing of your choice

Instructions

Please the chopped cucumber, tomatoes, and feta cheese in a bowl and mix them together.  Add your favorite salad dressing (to taste) and refrigerate.  If you are worried about your veggies getting soggy, you can always wait to add the salad dressing to individual servings.  Keep refrigerated.  Lasts for approx 5 days.
