Chicken, Broccoli, and Rice Bake – Meal Planning

If you’re looking for a quick recipe for dinner, you need to try this simple chicken, broccoli, and rice bake.  This is a stable recipe in my meal plan, and I make variations every so often.  For example, I typically use whole chicken breasts and chop them up into bite size pieces, to mix into the broccoli and rice mixture.  As you can see in the picture, the last time I made this dish I used chicken tenderloins and simply baked then on top of the mixture.  You can also add cream of chicken soup if you want a creamier texture.  I’ve tried this variation as well, and my family loved it.  If you try the recipe, leave me a comment and let me know how it turned out!

Ingredients

  • 1 package of chicken – 1-2 lbs. depending on whether you use whole chicken breasts or tenderloins
  • 1 package of frozen broccoli
  • 1 package of Knorr Chicken and Broccoli rice
  • 1/2 cup of shredded cheddar cheese
  • Your choice of seasonings

Instructions

Preheat your oven to 450 degrees.  Line a large baking dish with aluminum foil.  Place the pieces of chicken in the baking dish and season the meat as desired (I generally use salt, pepper, onion powder, and garlic powder).  Bake the chicken in the oven for 20-30 minutes.  While the chicken is cooking, prepare the Knorr rice and broccoli by follow the instructions on the packages.

Once the broccoli and rice are cooked, mix them together in large bowl and set that mixture aside.  Once the chicken is finished cooking, remove it from the pan, pour out any liquid that remains, and then spread the broccoli and rice mixture in the bottom of the same pan (No need to dirty up additional pans, right?!).  Reduce the oven to 350 degrees.

REMINDER: Don’t remove the aluminum foil from the pan after the chicken has cooked.  Simply pour out any liquid and leave the foil in place.  This will make clean up easy after your family devours this awesome dish!

After spreading the broccoli and rice mixture, place the chicken tenderloins or whole chicken breasts on top.  If you diced your chicken you can mix that into the broccoli and rice before spreading.  Then sprinkle the cheddar cheese on top and place the pan back into the oven for 15-20 minutes (this is just to melt the cheese and allow everything to bake together).
